Autumn Soup: From Johnetta’s Recipe Book

Two is better than one, and this Autumn soup is best described as if a beautiful stew and a hearty vegetable soup got married and then were pronounced as one. I’m not sure I could even make one or the other when this combination is just the perfect blend of both! You’ll love this recipe that my sweet friend Johnetta has been making since her own kids were little. I’m so glad she shared it with us, and you’ll want to gather people around your table for this one!

This gal and I met in 2018 when we moved next door to her and her husband. It wasn’t long before we were meeting at the backyard fence to pass over baked goods and good laughs. I’m a firm believer that you get to know someone awfully quick if food is at the center, and that was certainly the case for me and Johnetta. Soon we were sharing coffee, stories, and recipes and our friendship only got sweeter from there. You’ll see more of Johnetta and her recipes here on the Heart of the Homeland and it’s an honor for me to cook beside her.

Autumn Soup

A beautiful combination of a hearty vegetable soup and a beef stew.

Ingredients
  

  • 1 lb Ground Beef
  • 1 cup Carrots chopped
  • 1 cup Onion diced
  • 1 cup Celery chopped
  • 2 cups Potatoes cubed (Russet or Yukon)
  • 1 tsp Salt
  • 1/4 tsp pepper
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Dried Basil
  • 1 15 oz Diced Tomatoes
  • 1 15oz Tomato Sauce
  • 4 Cups Beef Broth or 4 Beef Boullion Cubes

Instructions
 

  • Brown Ground Beef and drain off excess grease.
  • In a large stockpot add carrots and potatoes then cover with water (or beef broth) and put over a medium-high heat. Then add the cooked ground beef, onions, celery, tomatoes, seasonings, and beef bouillon cubes if you're not using beef broth.
  • Bring to a simmer for about 30 minutes or until all the vegetables are soft. Pairs great with a rustic bread loaf.
  • You can easily double this batch like we did in the Youtube video paired with it!
    **You can put this on a low simmer all day on the back of the stove or add all the ingredients in your crockpot and set on low.
