Winter in Oklahoma doesn’t seem to truly begin until you’re completely ready for it to be over with. By the time we make it to that point in late February I only have one meal on my mind: wild onions and eggs.
It’s late March now, and the redbuds are blooming, the henbit is covering yards, and the wild onions are emerging from the ground. My grandma and I head out each Spring to pick us a “mess of ’em” as she always says. It’s a time that I look forward to spending with her each year, and we pick and clean them just as she did with her mom and grandma growing up.
