This recipe begins how all the good ones do. I was craving a brownie, but I needed some more pumpkin in my life, and then it dawned on me: pumpkin brownies. Voila, turns out that I was on to something special. You can do a lot with this recipe: add powdered sugar on top, mix in a chocolate batter with it if you prefer for a marbled effect, or use a cream cheese icing like I did.

Pumpkin Brownies with Cream Cheese Icing

Ingredients
The Brownies
- 3/4 cup All-Purpose Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 tsp Pumpkin Pie Spice
- 3/4 cup Butter Melted
- 2/3 cup granulated sugar
- 2/3 cup Brown Sugar
- 3 eggs
- 3/4 cup Pumpkin Puree
- 2 tsp Vanilla
Cream Cheese Icing
- 1 cup Powdered Sugar
- 8 oz Cream Cheese Softened
- 3 tbsp Butter Softened
- 1 tsp vanilla
Instructions
For the Brownies
- Preheat the oven to 350 degrees and grease a 9×13 or 8×8 baking dish with butter.
- Mix the flour, baking powder, salt, and pumpkin pie spice in a bowl and set aside.
- Melt the butter and then add it to a mixing bowl along with both the granulated and brown sugar. Beat until creamy and then add in the pumpkin puree.
- Add in the eggs one at a time and then add the vanilla.
- Mix in the dry ingredients, and then pour the batter into the greased baking dish.
- Bake for 40 minutes or until there are only a few crumbs if you insert a toothpick or knife. Allow to cool.
For the Cream Cheese Icing
- Beat the softened cream cheese and softened butter before slowly adding in the powdered sugar and vanilla.
- Beat on high for 2-3 minutes until it is light, creamy and fluffy.
- Spread on top of the cooled brownies and enjoy!
